I am planning our first trip to WDW for the end of january. We will be there 8 days and plan on spending 7 in the parks (1 day we are going to Universal). We are staying at the Carribean resort but I wasn't sure how to plan out the days and dinning (we have the dining plan but I need to make reservations sooner rather than later).
There is four of us. Two adults, an 8 y/o and 15 y/o. We have been to Disneyland more times than I can count. Any advice or tips would be great. I got the Birnbaum Guide but it is so overwhelming and I like to have things planned out.

spend more time at EPCOT since you've all ready done MK @ DL. Eat at Yak & Yeti @ DAK, great! DHS is NOT a full day but, there is a boat to EPCOT so, eat there.

Some good tips here. Some recommendations for pure WDW fun dining:

Ohana is a great polynesian experience at the Poly - very worth while. Or if you miss the old Tahitian Terrace at DL, then the Luau is a must.

For fantastic dining experience, I really do recommend the California Grill, especially at the time of the fireworks (no shorts allowed). It is like Steakhouse 55/PCH grill with great views.

For fun, especially the 8 year old, Whispering Canyon at the Wilderness Lodge is a must. It is so much fun, the BBQ food is good, and the waiters really make this place VERY special. A must do for us (read up on it on All Ears for more detail).

The Studios can be an all day affair if you do all the shows (Don't miss Lights, Motors, Action). But the restaurants are fun here too - Brown Derby for an upscale experience, the Sci Fi Dine in is great fun, eating a moonlit lunch at the drive in is a hoot, and the 50's Prime Time Diner is great if you get a good server - it's like being in a 50's sit com, literally, with family servers. Can be a blast.

Epcot - in world showcase, we have dined in all the country's table service restaurants except the UK (we live here). They have all been good. My favs is Le Cellier in Canada, Teppan Edo in Japan, Bierkellar in Germany, and Nine Dragons in China. Though I love the setting of San Angel Inn in Mexico too.

Yak and Yeti is supposed to be nice at DAK (it opened after our last trip) and Boma and Jiko in Animal Kingdom Lodge are awesome (and you can check out the animals).

Now, one big difference than DL is travel times. If you are going from one location to another for dinner, it is a whole new experience. Not too bad if you have a car, but if relying on Disney transport, allow an hour to go from a park to a hotel for dinner. And if going from one resort to another, allow 90 mins minimum (a cab is often a better option in this instance).

Lewis, you might want to check out Ridemax if you want your trip to be structured. But, mostly you will find next to no crowds and the ability to see and it all at a relaxed pace. I have to second the reccomendation on La Cellier. I have seen a lot of bashing of this place on blogs. But, honestly we have never been disappointed. Liberty Tree Tavern in MK is a must for us. The service is impeccable and the food is homey good.

I forgot about LTT. It is not the best for food, but the setting is great. And if I were to go for a character experience, this is one of the better ones in my experience at WDW.

Eat at the Crystal Palace in the MK...the food is buffet style and is so good........I am pretty sure that you need to reserve this place
also Universal is so much fun.
In Florida---Universal has 2 sides to it.

Liberty Tree is no longer a character meal... Except for the first couple months of 2010 when Crystal Palace will be closed for a refurb.
