Crockpot chicken and "chili"
1 can black beans 1 can white beans or pinquitos or kidney beans 1 can corn 1 16 oz jar chunky salsa or mexican tomatoes 4 chicken breasts or thighs
Drain the beans and corn. In a crockpot mix together with 1/2 of the salsa. Place chicken on top and pour the rest of the salsa over the chicken. Set on low for 8ish hours.
If you use breasts they can get a little dry, so I break them up or shred them before serving. You can also add 1/2 cup LF shredded cheese about 5 mins before serving (just til it melts)
Serve with LF tortillas, LF cheese and salad
The leftovers can be made into a really good soup just by adding some chicken broth :)

I've lost 14 pounds and have about 6 to go. I'll probably gain a few back since the last few have been from not eating (not from dieting). |

| amazedncal2 Thu 2/8/2007 7:47a | I don't see why you couldn't make this on the stove or in the oven :) I read the conversions one time for crockpot/oven. I'll see if I still have it, if not it could probably be googled. The 8 hours for the above recipe can probably be shortened, like I said, sometime the chicken breasts are over done.
I haven't lost any weight in 2 weeks :( but then again I haven't gained any either. Our walks have been shorter due to work, so this week I'm trying to get back to longer walks. I'm also changing my foods a bit. I think I was sticking with something that was working and now it isn't. |

| knightnfrees Thu 2/8/2007 2:59p | Week one of my lifestyle change finds me at a loss of 3.5 pounds! Yea! I feel good and am feeling more energetic. I've been doing a little walking, must do more, though. I think excercise is the key, 'cause change of diet will only go so far. |
