I think the big problem is getting the Japanese chefs to create something that appeals to other audiences instead of adjusting everything to their own tastes. It's perfectly understandable of course, but that may be the reason why they don't excel with Continental/Western cuisine. But seeing as how Canna is serving a blend of that and Asian, there is a chance that it could compete with Napa Rose and co. After all, you mentioned that you were impressed with the Chinese cuisine at the Crystal Lotus (not a big fan of Chinese food myself to be honest).

But unlike the other Disney resorts, TDR's clientele is almost all domestic (96% is the number I'm remembering), so it would make perfect sense if the menus are tuned to their tastes. Having said that, unlike what was determined for HKDL ("Chinese people want Chinese food"), TDR's food offerings are very much from around the world, despite the guests being almost all domestic, although the items may be adjusted for local tastes.

Agreed. I find the choice of foods to be extremely diverse and very good despite minor Japanese influences. I'm sure the local guests must have a different opinion of the restaurants than us foreigners. That being said, I've yet to be disappointed by any eatery at the resort.

Well, having an excellent Chinese restaurant in China is easy enough, I'd say. Just hire a great chef.

As for the fusion thing in Japan, I think they do an okay job with foreign cuisine, not Italian though >:(, but anyway it's decent...but yes they cater to Japanese tastes that's for sure. Why not have an excellent JAPANESE restaurant in the hotel?

Why is it any different from the Crystal Lotus thing?

And yes, HKDL was rather shocking in its approach. I didn't care for that much (though the food was good), I think Disney should offer variety with a Western style approach. But maybe no Chinese people would even sample such stuff, I dunno.

I'd be a bit put off if, for example, they served octopus on a stick at TDL instead of churros...even though that may be more to the Japanese liking. ;p

Will Chinese people really NOT eat anything else or something?

Do they have many foreign cuisine restaurants in Hong Kong at all? Are they popular?

Well, they certainly seem to favor their own cuisine above all others. But that's not to say they won't try something different every now and then.

Oh and if you don't mind answering, I have a few more questions for you Lee.

Does the lobby of the TDL Hotel feature stained glass domes like those in the Grand Floridian and HKDL Hotel? You mentioned before that there is a lot of public space, so I'm assuming there is plenty of seating in the atrium?

Also, does Canna bear a slight resemblance to the Crystal Lotus design-wise? I know that the latter is also designed with a flower motif and has several "tricks" in the restaurant.

Now that I think about it, they seem to have borrowed heavily from the HKDL Hotel- everything in the TDL Hotel seems to be a scaled up version of what was designed in Hong Kong. Which is good, since I much prefer the interior design of the HKDL Hotel over the one in Paris and the Grand Floridian.

What I find interesting about the HKDL situation is that the park was built out with primarily Chinese food venues from the very beginning. I could see if it was opened with a more traditional mix (by Disney park standards) of food, and then they had to change it after finding out that guests didn't like what was offered, but how did they come to the conclusion before opening that Chinese guests would overwhelmingly want food from their own country, especially in an entirely new and foreign venue such as a Disney Magic Kingdom? I guess one answer might be "market research" but then they seemed to get a lot of other things wrong based on their research, now didn't they?

Another question would be, did TDL have such a mix of foods from day one, or did it evolve over time?

I know that it was nice and diverse as far back as 1998, my first trip, but I've no idea what it was like those first fifteen years.
